Kale Vision Salad
- 1 cup Kale – stems removed, leaves shredded or finely chopped
- 1 cup Spinach
- ¼ cup Walnuts – chopped
- 1 cup Quinoa – cooked
- 1 Avocado – cut up
- 1 Orange Bell Pepper – diced
- 6 tbsp. Extra Virgin Olive Oil
- 1 cup Garbanzo Beans – washed
- 3 dashes Pink Himalayan Salt
- Crushed Black Pepper – to your liking
Directions:
Prepare Quinoa first by boiling in water. 1 part quinoa, 2 parts water. Boil until water is absorbed and quinoa is fluffy. Stir occasionally.
In a large salad bowl massage kale with sea salt to make it soft for 2-3 minutes. Add all other ingredients, toss with salad dressing; serve.
